Corned Beef Irish Potato Cakes

Unsurprisingly, Addie had St Patrick’s day in mind when she prepared these glorious looking Irish Potato Cakes. But, what separates these from the crowd is the corned beef. Addie sources hers from a local butcher but, if you are unable to do this, canned should work (though, as with most ingredients, fresh is best). Addie also suggests topping these with eggs…sunny-side up. I think I like that idea!

  • 4 cups peeled, large diced yukon gold potatoes (about 1 lb. potatoes)
  • 1/4 cup whole milk, heated
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 2 tablespoon melted unsalted butter
  • 1/2 cup diced corned beef
  • 1 teaspoon onion powder
  • 1 large egg, beaten
  • 2 tablespoons unsalted butter (for cooking)
  • 1 tablespoon finely chopped chives

Fail-Proof Pizza Dough and Cheesy Garlic Bread Sticks

for the pizza dough-
  • 1 cup warm water
  • 2 1/4 teaspoons active dry yeast
  • 1 tablespoon honey {or sugar}
  • 2 teaspoons salt
  • 2 tablespoons olive or canola oil
  • 3 cups bread flour {give or take 1/2 cup...depending on the heat & humidity}
for the cheesy garlic bread sticks-
  • 1/2 Fail-Proof Pizza Dough from above
  • 2 tablespoons softened salted butter
  • 2 cloves garlic, finely minced
  • 1/4 cup grated parmesan cheese {use the real stuff!}
  • 1/4 pound grated mozzarella cheese
  • {salt & pepper, if desired}

Cheesy Bacon Biscuit Pull-Aparts

A delicious, savory breakfast made from ingredients that are already in your fridge! Cheesy biscuit pull-aparts are monkey bread’s less sweet cousin.

  • 2 tablespoons melted butter
  • One roll refrigerated biscuit dough, 8 count
  • 6 thin slices fresh mozzarella, 1/4-inch thick

Garlic Grilled Tomatoes

I can’t decide which looks better, the chicken or the tomatoes but everything looks delicious.The chicken is grilled very nicely and it looks very good and delicious.The mustard and herb paste will provide a taste to the chicken.A complete “heavenly” meal.Yum!

  • 6 ripe red tomatoes
  • 6 cloves garlic
  • 2-3 tablespoons extra-virgin olive oil
  • Parmesan Cheese
  • 1 to 2 tablespoons fresh parsley
  • Coarse salt and black pepper
